Last week, the owner of Legendary Greens, Rebecca Adam, out of Bismarck, came to our 6th grade class to teach the students how to grow their own microgreens. Microgreens are tiny vegetable plants harvested at a very early stage shortly after sprouting. We received several growing kits of broccoli and peas from this program through the ND Department of Agriculture. The students mostly agreed (after taste testing some of the greens) that they would rather eat these baby plants than some whole vegetables. The tiny plants are packed with vitamins and minerals. Broccoli microgreens contain significantly higher amounts of nutrients compared to the full grown vegetable. The class is planning on harvesting what they planted within a few more days and will top off their lunches with what they grew!23
